  • 1 pound mixed mushrooms cremini and shiitake work well
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 2 tablespoons olive oil

  • 1 teaspoon vegan Worcestershire sauce
  • 1/2 teaspoon smoked paprika
  • 1 cup raw cashews soaked for at least 2 hours
  • Salt and pepper to taste

  • Start by heating the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  • Add the minced garlic and cook for another minute until fragrant.
  • Add the mushrooms to the skillet and cook until they release their moisture and become golden brown, about 10-15 minutes. Stir in the fresh thyme, vegan Worcestershire sauce, and smoked paprika.
  • Cook for another 2-3 minutes to allow the flavors to meld.
  • Remove from heat and let cool slightly.
  • Drain and rinse the soaked cashews, then add them to a food processor along with the cooled mushroom mixture. Blend until smooth and creamy, scraping down the sides as needed. Season with salt and pepper to taste.
